Marinated salmon slices

INGREDIENTS FISH

1 orange, untreated
1 lime, untreated
600 g fresh salmon fillet, preferably back fillet
Salt
20 ml olive oil
1 bed of cress, e.g. daikon cress: Daikon cress

300 g tart apples
80 g KOCH'S creamy horseradish
100 g coarse mustard
Sugar

1 bed of cress, e.g. daikon cress: Daikon cress

INGREDIENTS MUSTARD

300 g tart apples
80 g KOCH'S creamy horseradish
100 g coarse mustard
Sugar

PREPARATION

Wash the citrus fruit in hot water, then dry: finely grate the zest separately and squeeze the juice from the fruit. Reduce the orange juice to one tablespoon, then cool.

Cut the salmon fillet into thin slices and arrange on four plates, then season with salt, sprinkle with lime zest and drizzle with 40 ml lime juice - leave to stand for at least 10 minutes. In the meantime, cut the cress from the bed. Just before serving, drizzle the salmon with olive oil and sprinkle with cress.

For the mustard, wash and finely grate the apples, then mix with the horseradish, mustard, orange juice and zest. Season the mixture with lime juice, sugar and salt. Divide the mustard mixture into small bowls and serve with the salmon.
