Rösti burger with salmon

INGREDIENTS BURGER

1 lime, untreated
200 g cucumber
Sugar
Salt
120 g red onion
4 leaves of lettuce, variety of your choice, e.g: Frisée lettuce

500 g potatoes, floury
200 g carrots
1 egg (M)
30 g wheat flour, type 405
Black pepper, freshly ground
total 80 ml peanut oil for frying

INGREDIENTS FISH / SAUCE

4 pieces of salmon fillet, 160 g each
1 jar of KOCH'S gravad salmon sauce

1 jar of KOCH'S gravad salmon sauce

PREPARATION

For the burger ingredients, wash the lime in hot water, then dry: finely grate the zest and squeeze out the juice. Peel the cucumber, finely slice and season with salt, then leave to stand for 10 minutes and squeeze carefully later.
Then season with lime zest, 10 ml lime juice, sugar and salt.

Peel the onions: Finely dice half, finely slice the rest. Clean, wash and spin dry the lettuce.

For the rösti, peel and roughly grate the potatoes and carrots, then mix with the onion cubes, egg and flour and season with salt and pepper. To serve, fry a total of eight rösti in two batches in 30 ml peanut oil in a large pan over a medium heat.

For the fish, rinse the salmon with cold water, dry and fry in a pan in the remaining oil over a high heat for one minute on each side, then season with salt and pepper and drizzle with lime juice. Build 4 burgers together with 2 rösti, cucumber, onions, lettuce and gravad salmon sauce.
